This is an older post but I have to put my 2 cents in also. My Minolta SRT cameras and the Pentax K1000. You only need batteries for the light meter. Got to mention the Minolta XE-7. You can fire the shutter on X or B if your battery is dead.

The Pentax K-1000 does not use a mercury battery and it has a bridge measuring circuit, which means that you can use any type of battery at any voltage. Alkalines work fine.

Totally mechanical? Nikon F with Pentaprism finder. If a built-in meter is allowed, Then the Nikon F2. Don't think I have ever encountered an F or F2 with an inoperable shutter. Also the F2 uses silver batteries, not mercury.

For a purely, 100% mechanical camera I would pick the Exakta VX lla. Its wonderful versatility, the great number of its accessories and its reliability endear it to me. Its few shortcomings - the relatively dim viewfinder by today's standards and its non instant returning mirror never bothered me in the ten years I used it. I could live with them now.

Probably the nicest all manual camera I've used is my Minolta SRT101

Not the most fancy, but I love my Icarex(es); solid, no frills, very nice Voigtlander optics (although it says Carl Zeiss...)

I have been using my 'new' Pentax SV this week and it is a delight. I mentioned my Pentax SV earlier in this thread and I have to say that the Pentaxes are finally living up to my adolescent dreams of 40-something years ago.

The Pentax sv is a greT, uncomplicated camera. It fits the hand perfectly. One of my favorites, too.

my first choice would be (is) OM-1. next in line is Nikon FM-2. then, a pre-A series canon (the ef is especially nice), a Minolta srt, and a k (not m) series Pentax pretty much tie for third. I have about a 150-way tie for fourth place.

rick,
I see you use a Universal Mercury . A camera well deserving a prominent place in this list of favourites.
