On my two Rollei's there is an ASA/DIN wheel and a film type wheel inside the ASA wheel. There are four choices, Ortho, Pan, Col. with a light bulb, and Col. with a sun. I am assuming Col. means color, what about Ortho and pan? It was on Ortho when i found the cameras and haven't changed it. Is this selector just a reminder of what film you have in there? Just like the ASA/DIN, since there are no meters on my Rollei's, does it matter what setting it is on?

Orthochromatic, Panchromatic, Colour and (I presume) artificial light film. I don't know the Rolleis, but I imagine it is just a reminder. You can read up on Ortho and Pan films on such as wiki.

It doesn't matter. It is, indeed, merely a reminder.
The colour was for daylight and incandescent bulbs.
The Orthochromatic film was insensitive to red light. Red would photograph as black. The Panchromatic was sensitive to all colours.
